Rims (noob)

Ok i dont know anything about tyres and rims and what not .. i know if it look sgood its good. If its JDM or sexspec etc...

By the end of the year i plan to get rims, something either brand new, second hand doesnt matter. JDM style.. nothing big probably a 16 ( <- preffered) or 17inch no smaller with low profile tyres. i got a few questions
q1) i always hear things like 2 piece, 1 piece, 3 piece etc... Whats better ? (I understand that it means its made of this many pieces i think?)
q2) 350z a car with FAT rears but and normal fronts (this is what i want), But i dont want to do what the other cars do and have my wheels sticking out. I like my wheels where they are i just want them to stretch INWARDS, So obviously i need fat tyres.. for the rears but how much can i put ? If i have to get the guards rolled or something im very willing to do so. But can a guard roller, bash it INWARDS?
q3) rears i plan to get sh*t tyres simply because i love having fun in the rain and i do not track my car. Fronts i plan to get something decent at a REASONABLE price>> Recommendations (something sticky in wet and good in dry)
