How do I determine the offset on a set of aftermarket wheels?

It should be stamped or moulded on the inside of the rim somewhere, its normally has et45 or something like that. Or you could measure it.

Sorry for my ignorance but what exactly do I measure?

No problem, If you have say a 7" rim the centre will be 3.5" now the distance between the centre of the rim and where the actual inside of the mounting plate, is the offset.
This calculator might explain it better, just play around with the offset and you'll see what I mean. The offset is the column ET, I think its the last one up top on each wheel.
