Are your injectors leaking down when you shut off the car, is that the issue?
Generally speaking, the way it works is that a mechanic will remove the injectors and then either send them to an injector shop for cleaning or a mobile van type of guy will come over to do it.
The cost is pretty std (IIRC about $120 for the injector guy), and I figure that pretty much any normal mechanic would be able to do it for about that much again in labour.

If you're in Rhodes, take your car to John Edwards. He's in West Ryde.
You'll probably see the Luce in a million pieces there since he's rebuilding the engine for me, and IIRC I think he was going to send off my injectors for cleaning early next week, so if you hurry he might be able to fit you in.
He's in Rhodes St, West Ryde, I think the address is 11/14. There is a long driveway (with a really steep angle where it meets the road) next to the sandwich shop (there'll be a sign that says something-something shopfitters).
Drive all the way down to the end. It's unsignposted, but there will be cars all over the place (lots of vintage Packards), and if you get molested by a kelpie and a cockatoo sitting outside greets you, that's the right place
