I would have thought 0 offset wheels would be one of the more aweful things you could do for the handling, but might be handy for hella sic stance flushing pard harker yolo something something.
In 15x8, something closer to +36 would be the pick. Maybe I'm too old to answer this question. I just love how the car handles, and poor wheels choice takes away from this a lot.

They'll clear the brakes, but it'll be a tight fit in the guard side. You'll need coilovers to get low enough to make it work.
I'd flog them and get something else, grids come in 15x7+25 or similar which is much more mx5 friendly.

A wider stance would slightly decrease the chance of a rollover, but not much with the silly 195 stretched tyres.
Fitment, I had 15x8+25 on my NB8A with 205 tyres, and it just cleared. Yours will stick out an inch further, so will hit the gurads unless you run lots of camber, roll guards, etc.
If you're stretching a 195 to fit on an 8inch wheel you've already made it handle worse, so the low offset wont be much concern.
If you fit a properly sized tyre it wont handle as well as the same wheel in a more regular offset, but will still be more than capable on the road.

Something like an rpf1 or similar will net you some serious weight loss over these monsters.
