My budget is not at the level of load sensors and the like. However there are two solutions that I've used:
The first is the option that rascal has so nicely detailed... testing at a track and comparing laptimes.
The second which I've used a few times is to record the suspension compression at speed via a gopro and use some simple maths to convert suspension movement into approximate weight (downforce amount) over the suspension arms.

I'm gonna guess the 'fat boy' 225/50s... they're a bit too tall but they're still the fastest on a 15 inch wheel

Ah right. Considering some 15x9" wheels for my car but tyre choice is very limited. They don't look too bad on the 9" rim, slightly chunky sidewall, but I imagine there'd be some decent guard rolling required to run on a street car.

If it's purely a street car, 15x8's are more than enough and will perfectly match some 205/50's

We can't run softs in our club motorsport but i've been using 215s instead of 225 A050s mediums. We do have a lot more Autokharana/Sprint type events instead of just track work.
If you had access to a car like this, would you take it back right away? Neither would I.

15x9s with the right offset and 225/45s should fit on your SE with maybe just a flat roll. But as you say, not a lot of choice in tyres, A050s, NT01s, RS3s... not sure of much else.
I run 15x8 +20 or 25 (not 100% sure) with 225/45 NT01s on my SE and have just a flat roll at the rear, no roll at the front, I get some minor rubbing on fender liners at full bump at the front but nothing I'm worried about. I will buy 205/50s for my next set of tyres because they are significantly cheaper than 225s generally.
If you're not tracking the car, or if you're ok with not getting every last 0.1%, then 15x8s and 205s are cheaper and give you a lot more tyre options. If you want to go fastest at all costs then 15x9s and 225/50 A050s.

Looking to set my car up for some weekend track work. The 15" wheels and tyres will more than likely just be for the track, so I think I'll go with the 8" rims and the 225/45 RS3 or NT01 tyres for now. In the long run this will give me more options with the tyres as mentioned.
